You know spring is here when asparagus starts appearing in the shops. In this dish, asparagus sings with fresh herbs, olive oil, lemon and cheese with just a hint of chilli. A chilled glass of Sauvignon Blanc is a perfect match.

Here at Noosa Foodie we are big fans of cooking and eating seasonally and locally, and this salad fits the bill big time at this time of the year. Local tomatoes are amazing at this time of the year (I grow my own), as is the local asparagus which I buy from the Noosa Farmers Market.
Asparagus is in the height of its season, and as a result it’s inexpensive, plentiful and flavoursome – three good reasons to be cooking with it! In this recipe, prosciutto-wrapped asparagus is paired with Haloumi cheese and dressed with a Lime & Caper dressing – a divine combination! This dish works really well cooked on a barbeque – perfect for relaxed outdoor dining. Serve it as either a starter or lunch, together with with fresh crusty bread and a glass of well-chilled sauvignon blanc.
